I love this meal because it can be made in advance and simply reheated when you are ready to eat. It’s also plant-based and highly nutritious.
The body is a wonderful thing that I will never fully understand, but I will always trust. I have had some weird cravings of late where all the foods I usually like I currently unfortunately dislike. A very strong urge for dairy started a few weeks back. Of course at first I didn't want to listen because dairy was not apart of the perfect diet I had planned for myself. Then a little voice inside my head reminded me "Listen to your body." Practice what you preach.
This amazing meaty (but not meaty) pumpkin seed meat is the perfect pre made spread/dip/ taco meat to have as a ready to go meal. I always make twice the amount i need and leave in the fridge. Its perfect to put on coconut wraps or nori paper with salad. You can also mix a little in with a fresh green salad and it provides the good fats and protein your body (my body) craves.
Kelp noodles are a sea weed found in the form of a convenient to eat raw noodle. They are prepared using three ingredients, kelp (a sea weed), sodium alginate (natural salt derived from brown seaweed), and water, with no additional fillers. Kelp noodles don't contain cholesterol, gluten, wheat, or sugar. And they are delicious making a fun alternative to wheat pasta and rice noodles.
Mung beans are full of protein and are packed with potassium, magnesium, folate, fiber, and vitamin B6. Many women are deficient in magnesium and need it to control stress and repair muscles, especially if you are working out.
